Quick and easy healthy pancakes!
Great breakfast option, snack or post workout food.
All you need is:
- Banana (more ripe the better!)
- Plain flour
- One egg
Mash the banana with a fork, add in an egg and mix. Add a heaped tablespoon of plain flour and stir. Pour whole mixture into a non stick pan or will make four small scotch pancake style. Heat for 2-3 minutes (until see small bubbles) and turn for a further minute.
If you would like to add fruit: blueberries, raspberries or strawberries – add after flour before cooking.
Add a little drizzle of honey to serve (optional)
